    1. Creamy Mushroom Pasta

    This recipe is going to blow your mind and you might feel like an unusual combination of ingredients but everything works incredibly well together.

    • Start the recipe by chopping two large shallots. You can also use red or yellow onion if you like. This pasta tastes amazing when chill and garlic are added. Take six garlic and finely mince them along with chili and chop it coarsely.
    • Now take four cups of mushroom; make sure it is a mixture of both cremini and oyster mushrooms. Thinly slice both mushrooms. It is easier to slice oyster mushrooms or you can tear them into slices with your hand as well. Oyster mushrooms give a meaty texture and appearance when cooked.
    • Next, chop a quarter of a cup of sundried tomatoes. I got it from a jar but you can do it with home sun-dried tomatoes as well.
    • Now in a large pot on medium heat, add a little bit of vegetable oil and when the oil heats up then add onions, garlic, and chili at once. Stir it for a while and cook for a minute then add a splash of water to deglaze the pan.
    • Then add all the ingredients in the pan at once including bouillon cubes, two cups of boiling water, one can of coconut milk (For extra creaminess add full fat but light fat would work just fine as well).
    • Now add four cups of dry pasta to the pot. Then, add mushrooms to the pan along with two tablespoons of nutritional yeast. Then, add one tablespoon of sodium-reduced soy sauce, one teaspoon paprika powder, sundried tomatoes, and freshly cracked black pepper.
    • Mix all the ingredients and give it a boil to reduce the simmer and partially cover the pot with the lid. Keep checking the pasta and occasionally stir it as well so it prevents sticking any ingredient to the bottom of the pan.
    • When the pasta is done in 15 minutes then add a couple of handfuls of spinach to your pasta. The volume of spinach will reduce once you give it a good stir. Pasta is ready to enjoy. Garnish with fresh basil leaves and serve it hot.

    2. Spicy Rose Penne

    It is a cross between both white and red sauce pasta since the name has been given “Rose”. It is ultra-creamy and flavorful pasta.

    • Start the recipe by dicing one onion and mincing 4 cloves of garlic. Add a little bit of oil to a pot and heat the pot on a medium flame.
    • Now add the garlic and onion to the pot along with bouillon cubes and red pepper flakes. Give it a good stir and cook it for a couple of minutes until the onions turn translucent.
    • Now add three cups of dry penne pasta in the pot along with one a half cups of boiling water. Give it a good stir then add three cups of tomato sauce, 3 tablespoons of nutritional yeast, and ¾ cup of hummus (this is the secret ingredient of this recipe to make it creamy).
    • Mix the sauce well and let it come to a boil. Reduce it to a simmer and cover the half pot with a lid. Keep stirring the pasta in between so it does not burn or get stuck to the bottom of the pot. While, these cooks cut a zucchini in half and cut it into slices.
    • Now, coarsely chop a couple of roasted bell pepper. You can get it from a jar. It will give the pasta a lovely flavor. If you do not like bell pepper too much then a single bell pepper will work just fine.
    • Now chop half cup or artichokes that you can get from a jar as well. Now, take a plant-based creamer, for instance, almond or soy whichever you like better. 
    • When the pasta has cooked for about 10 minutes then add the creamer about ¾ cups. Now add the zucchini, roasted bell peppers, and artichoke and give it a good mix. 
    • Let it cook for another 8 to 10 minutes or until the zucchini is done. Remove the pot from heat when the pasta is done and garnish it with basil or fresh parsley.

    3. Tomato Lentil Spaghetti

    It is another quick and easy one-pot pasta recipe. Let’s get started…

    • Chop one medium-sized onion and mincing four cloves of garlic. Now cut two cups of cherry tomatoes and 1/3 cup of sundried tomatoes. Now take a jar of cooked brown lentils wash it and drain it.
    • In a large pot, heat the oil and add onion along with garlic & one bouillon cube. Now add half a teaspoon of Italian herbs and chili flakes. Stir it for a while and splash water if needed to deglaze the pan.
    • Now add three cups of pasta sauce in the pot, 2 cups of boiling water, spaghetti pasta, cherry tomatoes, sundried tomatoes, and lentils all together. Add a tablespoon of capers and it will take a little while to soften in the pasta.
    • Let it simmer and partially cover the lid. Let it cook for 10 minutes and the tomatoes will be done by then. Serve it in a bowl and garnish it with freshly chopped parsley and basil. Also, add some chopped nuts if you may like.
