Kesong Puti Ice Cream is a satisfyingly delicious dessert yet it‘s very easy to make. It’s made by mixing generous amounts of kesong puti or native white cheese, cream, and condensed milk. The result is a smooth, rich, and creamy ice cream with hints of saltiness from the cheese.

    Kesong puti is soft, white cheese made by curdling carabao’s milk with acids such as vinegar or any citrus fruit. Unlike other types of cheeses, it's not aged and can be consumed almost immediately once the milk has curdled or coagulated and the liquid or whey has been drained. Salt is added mainly for flavor, and to balance out the acidity and the richness of the cheese. 

    It’s popularly eaten during breakfast, usually with pandesal bread. However, it can also be added to salads, pasta, pizza, omelet, and bibingka (rice cake). In the provinces where kesong puti is made, like in Laguna, it is sold in the streets wrapped in banana leaves.

    Is kesong puti nutritious? Well, it's a good source of carbohydrates, fat, calcium, protein, and sodium from the added salt.   

    I personally love Kesong Puti. I eat it in sandwiches, sometimes I pair it with watermelon, and I also consume it on its own. However, some months ago, I thought of making kesong puti ice cream at home because I was thinking of a way to make a dessert out of it. It came out brilliant and I would say that it’s the best ice cream flavor I have ever made.

    This recipe is really simple to make because you just need three ingredients. Here’s what you have to prepare: 


    For the kitchen tools, you would need a bowl, a blender, a beater (optional), spoon or ladle, and, of course, a refrigerator or freezer. I don’t use an ice cream churn because I do not have one but my finished product is still fairly smooth. If you have an ice cream churn, go ahead and use it for smoother ice cream consistency. 

    For the ice cream, start by tearing half of the kesong puti into small pieces. Put it in a blender and blitz with one carton of all-purpose cream until smooth. 

    In a bowl, beat the remaining all-purpose cream until slightly aerated. Combine it with the kesong puti-cream mixture and sweeten with condensed milk. Shred the other half of the kesong puti into chunks and add it to the mixture. This will add texture and more flavor to your ice cream.

    Once done, freeze your ice cream for four hours or overnight. You can serve it on its own or drizzle it with caramel and top with cashew nuts or almonds.

    • 2 cartons Nestle all-purpose cream
    • 1 can Liberty condensed milk

    6. Freeze your ice cream for four hours or overnight.
