What you will need for the Garlic Butter Shrimps with Bacon recipe

I usually prepare two kilos of large shrimps, half a kilo of bacon, five cloves of garlic (more garlic means more flavor!), unsalted butter, a tablespoon of olive oil, and salt and pepper to taste.

For the shrimps, we like to buy them either at Cubao Farmers Market or at Novaliches Market. They’re much bigger than the ones sold in supermarkets. For the bacon, you can use any brand. You can even buy chopped bacon, this will also do. It can also be plain or honey-cured but we find plain bacon to be more economical to use.

For kitchen equipment, you need a frying pan, spatula, knife, chopping board, and a plate. You also need a toothpick for deveining the shrimps and scissors for cutting the shrimp antennae.

Start by washing the shrimps well in clean water. I try to remove the slippery feeling as well as the fishy smell by washing it in water twice. Using scissors, snip off the antennae, and then devein the shrimps with the toothpick.

You can remove the heads and make crunch shrimps heads separately (season cornstarch with salt, pat dry shrimp heads and dredge with the seasoned cornstarch, and then deep fry in hot oil. Serve with the garlic butter shrimps). That’s entirely up to you.

I steam the shrimps until cooked halfway and reserve the juice. I find that if I do it this way, I wouldn’t have to cook it too long in the garlic butter sauce.

Mince the five cloves of garlic. If you want to add more garlic, go ahead. You can never have too much garlic in your food, anyway.

If you are using regular bacon, mince it before frying it. In a pan, put the minced bacon and a small amount of water. The simmering water will render the bacon fat. When all the liquid has evaporated, you will be left with bacon fat at the bottom of the pan. Use this small bit of fat to toast the bacon. Set the bacon aside once it's toasted.

In the same bacon fat, cook the garlic until soft. Add the shrimps and shrimp juice, then add butter and simmer. Add half of the toasted bacon and mix. Season with salt and pepper.

Transfer to a serving dish, sprinkle with the remaining bacon bits and serve. If you decided to make crunchy shrimp heads, arrange these on the side for presentation. Enjoy!
